Baked, Not Fried: The Quality Behind Our Long Shelf Life, Ambient Donuts
Retailers and distributors who list a new bakery line want to know two things before anything else: is the product safe, and will every box match the last one. Our answer starts with three words: baked, ambient, long shelf life. This post sets out how The Little Happy Bakery delivers on them, from the oven in Sofia to the pallet at your warehouse.
Baked, not fried
Our donuts are oven-baked rather than fried. This is the starting point for everything else on this page.
Baking rather than frying means there is no fryer oil to manage or replace, which removes a common source of variation in fried products.
Baking also suits the way we sell. The donuts are ambient and individually flow-packed, so they travel across Europe and the Middle East without a chilled chain.
ISO 22000:2018 certification and HACCP
Production takes place at our site in Sofia, Bulgaria, which is certified to ISO 22000:2018, the international standard for food safety management systems. The certificate is No. 220334, issued by MG Global, and is valid to 6 October 2027.
Alongside the certification, we operate under HACCP. In general terms, HACCP is the approach in which food safety hazards are identified and critical control points are monitored. The two systems work together: HACCP covers the day-to-day controls, and ISO 22000 places those controls inside a managed system that is checked by an external certification body.
Lubimka Ltd., the family-owned company behind the brand, was founded in 1997 and has more than 25 years in the dessert industry. The business started with halva and traditional desserts, and the same attention to process now applies to the donut range. Long shelf life and ambient storage for retailers
Single glazed, single filled and double donuts are individually flow-packed. Mini donuts come in 200 g share bags. Across the range, the shelf life is a long six months, at ambient temperature.
Storage is simple. Keep the product in a cool, dry place at 0 to 25 °C. No refrigeration is needed at any point: not in the warehouse, not in transit and not on the shelf.
For a retailer, this means the donuts can sit in ambient grocery, confectionery or bakery aisles, and in impulse locations near the till, without a chiller. For a distributor, it means less pressure on stock rotation than with fresh bakery lines.
The whole range follows the same shelf life and storage rules: 50 g glazed donuts, 60 g filled donuts, 2 x 60 g double donuts and 200 g mini donut share bags. Packaging and pallet standards
Consistency does not stop at the recipe. Pack formats are standardised so buyers can plan shelf space and logistics without surprises.
Single donuts (50 g and 60 g): 18 pieces per box, 264 boxes per pallet, 4,752 pieces in total. Pallet size 120 x 80 x 240 cm.
Double donuts (2 x 60 g): 20 per box, 132 boxes per pallet, 2,640 pieces in total. Pallet size 120 x 80 x 180 cm.
Mini donuts (200 g share bags): 7 bags per box, 176 boxes per pallet, 1,232 bags in total. Pallet size 120 x 80 x 240 cm.
Private label donuts are produced under the same ISO 22000 system, with packaging in the customer's brand and design support. For private label projects, logistics run by full or mixed pallets, with export documentation handled on our side.
